Favorite Things: Uproot Pie Co.

If there is one thing I love in life, it is pizza. So I was in absolute heaven the other day when I found out that the Uproot Pie Co. was catering the bridal showcase I was attending. I had never run into Uproot Pie Co. before, but let me tell you, I hope that I will run into them every day for the rest of my life.

Uproot is an adorable mobile wood-fired pizza truck that is the brainchild of Jessica Shepard. Shepard got her culinary degree from the Western Culinary Institute in Portland, OR in 2004 and has spent the years since traveling around the country learning different baking techniques. She fell in love with wood-fired cooking after learning about French pastry baking, and several adventures later, she ended up back in Portland, OR, working for a wood-fired pizza company. Eventually she decided she wanted to move to midcoast Maine. And once here, she decided to craft her very own wood-fired oven onto a trailer, hitched it to her truck, and has been baking delicious gourmet wood-fired pizza at events all around Maine and New England ever since. And of course, Uproot uses locally harvested Maine wood to fuel its little oven’s fire.

Uproot’s creations are not just your run-of-the-mill pepperoni and cheese. Its crew is happy to come up with custom creations for your event. I was lucky enough to get to choose from peach & ricotta, margherita,  apple & bacon, salami, and veggie. Well, let’s be real, I didn’t really choose; I had a slice of all of them! and even went back for seconds!

If you’re thinking of having a casual wedding or looking to for an easy, low-stress option for your rehearsal dinner, Uproot Pie Co., in my humble opinion, is a great option!
